We all know what ewedu soup is. This is a typical Yoruba soup that has almost the same characteristics as other soups mainly ogbonor and okro, it's unique benefits differentiates it.
This soup is loved by all not just the Yoruba people though. Well... I love the soup not just for its benefits but also for its texture and the way it blends with my swallow (eba or amala). If you have stayed in Lagos state you will understand more of what am saying. When people gather around to chat or discuss about their experiences in Lagos state, ewedu soup is not left out. To most people say; if you have stayed in Lagos state and you don't know what ewedu is then u have not arrived. This soup is mainly served with amala. Whao! Amala delicious. Their like twins from different mothers (if thats even possible)
NUTRITIONAL INFORMATION
* Ewedu leaves pack the antioxidant trio of vitamin A, C & E which fends of free radicals there by protecting the body from degenerative diseases. The ACE vitamins also happens to be the most vitamins, increasing collagen production to keep the skin firm and young looking. This is why most people belief that ewedu was Cleopatra's beauty secret.

Ingredients :
* 3 cups of fresh ewedu leaves (de-veined and finely chopped).
* 2 cups of fresh water.
* 1 teaspoon of locust beans (optional).
* Salt & maggi to taste.
Directions :
* place a medium size pot on high heat, add in the water and bring to a rolling boil.
* Reduce the heat to medium, add in the fresh ewedu leaves. Simmer for 5-10 minutes or until the leaves are very tender.
* Add in locust beans, maggi & salt. Stir ; taste and adjust for seasoning.
* Simmer for another minute.
